Lactation-Boosting Vegan Choc Chip Cookies

I was given the original recipe for these – which contained sugar, wheat etc.

I have since altered to create a more wholesome and supportive biscuit that is extremely moreish…the dried white mulberries are a great source of protein, iron, calcium, vitamin K, C, A, B6 and E, fiber, potassium, niacin, riboflavin, folic acid, manganese, magnesium and antioxidants.

I use a dark chocolate that is dairy and caffeine free, and sweetened with evaporated coconut milk to give even more of a nutrient kick, and to reduce the chance of upsetting bub’s precious tummy through potential intolerance.

Vegan Lactation Cookies Recipe

Ingredients:

200g almond meal
3 tablespoons dessicated coconut
4 tablespoons macadamia oil
2 or 3 tablespoons raw honey
1 tablespoons brewer’s yeast
A good handful of chopped organic sundried white mulberries*  (sultanas or juice sweetened cranberries can be used instead)
4 tablespoons finely chopped dark chocolate*

Instructions:

Preheat oven to 160C. Combine almond meal, coconut, brewer’s yeast, oil and honey and mix well – working mixture by pressing and mixing with a steel spoon to warm the oil and break up clumps.
Add fruit and chocolate and mix well. Grab small handfuls of the mix and press and roll into biscuit shapes. This helps to bind the mixture when baking.

Pop onto a lined tray and bake for around 20 mins or until lightly golden. Cool for 10 mins on a tray before transferring to a cooling rack.

Makes around 15 cookies and a wonderful gift for a new and tired mama!
